5 pieces of dried sea cucumber per pack
Preparation of Dried Sea Cucumbers
Soaking: Soak the dried sea cucumbers in tap water in the fridge for 2-3 days. Change the water daily. They're ready when they're soft without a hard centre.
Cleaning: When they are soft, cut them open at the bottom with scissors, remove the sandy mouth (a white, calcified part at one end) and rinse them thoroughly.
Cooking: Boil the sea cucumbers. Use a large saucepan without any oil and fill to 3/4 with water. Bring to the boil on a high heat, then simmer on a low heat for 90 to 120 minutes, depending on the size of the sea cucumbers. When cooked, leave to cool. If some are still hard, continue cooking on a low heat until they soften (they should be tender and springy to the touch).
Soak Again: Place the cooked sea cucumbers in pure water and fridge for a further 2-3 days, changing the water daily.
Freezing: After soaking, freeze each sea cucumber individually. Wrap them in cling film for storage. When you're ready to eat, simply thaw them in cold or hot water, and they're ready to go!
