A rice paddle, also known as a Shamoji, is a flat, broad, and slightly curved utensil traditionally used in East Asian cuisine—especially Japanese, Korean, and Chinese kitchens—for scooping, mixing, and serving rice. Made from materials plastic, the rice paddle is designed to handle freshly cooked rice without damaging or crushing the delicate grains.
The surface is often non-stick, sometimes with textured bumps or a dimpled pattern to prevent the rice from clinging to it. In Japanese culture, the Shamoji is used not only to serve rice but also to gently fold and mix sushi rice with vinegar without making it mushy.
