Chilli Oil made the traditional way. Note that this is Shaanxi and not Sichuan chilli oil so there is no "mala" numbing flavour. This chilli oil is the "fragrant" crispy style and not as burning spicy as the Sichuan styles.

Spicy dipping sauce:
- Soya sauce, sugar, crispy chilli oil, vinegar (optional)
(Great for dumplings)
You can also add sesame paste to the spicy dipping sauce to make an excellent bowl of dry tossed noodles.
