Quinoa is a nutritious whole grain with all 9 essential amino acids (including lysine) - essential for tissue growth, repair and development. According to the FAO (Food and Agricultural Organization of the United Nations), Quinoa is one of the grains with the most nutrients per 100 calories. It is so nutritious that NASA, the National Aeronautics and Space Administration in the USA, feeds it to crews on long space missions.
High in protein and dietary fiber, Quinoa also contains B vitamins, folate, calcium, magnesium, a diverse array of antioxidants and many more phytonutrients. Quinoa is known for its high amount of superior protein (12-18%), which is higher than all other grains (50% more than wheat). How to Cook Quinoa Seeds:
1) Rinse quinoa in a fine-mesh strainer. Place 1 part Quinoa and 2 parts water (or stock) in a saucepan, bring to a boil. Reduce to a simmer, cook for 15-20 minutes until the quinoa is translucent, plump and the external germ (“spiral tail’) is visible.
2) Quick Rice Cooker Method: Quinoa cooks like rice and can also be cooked in a rice cooker (1 cup quinoa with 2 cups of water)
