•Blanch the pork belly
•Rinse the blanched pork belly to clean it
•Cut the blanched pork belly into 1.5 inch thickness
•Gently bruise the garlic and shallot
•Heat up the oil in medium-low fire
•Add rock sugar to the pan and cook till caramelize
•Add dark soy sauce
•Add bruised garlic and shallot
•Add blanched pork belly and stir well.
•Pour in water and let it simmer.
•Add light soy sauce.
•Add Song Fa Braised Spices (both sachets)
•Bring the braising liquid to a boil
•Cover lid, turn to medium-low fire and let it simmer for 20 mins
•Add in the hard-boiled eggs and tau kwa, submerge them into the braising liquid.
•Simmer for 15 mins
•Remove the Song Fa Braised Spices.
